So simple + So delicious = So often. If you find something you love that doesn’t derail your weight loss efforts, it’s a no-brainer to add it in on heavy rotation. This kale quinoa salad is so easy to make that it’s hard not to whip it up all the time.

(But you won’t be the only one. This salad is a huge staple with Google employees.  Apparently it’s one of the most popular items on their NYC menu.)

Google’s Quinoa and Kale Salad

Serves 4 

Ingredients

1 bunch kale, washed and de-stemmed
1 cup cooked quinoa
2 avocados, diced
Juice of 2 lemons
2 tablespoons olive oil
Salt, to taste

Method

1. Chiffonade the kale by stacking the leaves, rolling them tightly, and then slicing them perpendicularly to the roll to create long, thin strips.

2. Mix everything together and enjoy!
